THE STORY OF TAY HO
A JOURNEY TO HONOR THE HERITAGE OF THE NORTHERN LAND
Tay Ho was formed from an aspiration to preserve and honor the essence of Northern Vietnamese cuisine — the land of the former imperial capital, where every dish, every technique, and every layer of flavor has been shaped through precision and refinement. We began with a very simple question:
How can the culinary identity of Northern Vietnam be fully present in a modern Saigon, while still preserving the “heritage” that has made this land renowned?
We embarked on this journey with the belief that Northern cuisine, when carefully distilled and placed within a clear, contemporary context, will continue to radiate its beauty in a distinctly modern way.
That journey has led Tay Ho to a guiding philosophy: preserving heritage by presenting it in a contemporary form — from space to cuisine, from materials to experience.
HONORING THE ROOTS THROUGH A CONTEMPORARY LANGUAGE
- The rustic straw–husk–textured wall embodies the breath of tradition — the simplicity and warmth characteristic of Northern Vietnam, evoking the sincerity and familiarity of bygone times.
- The modern crystal wall brings elegance, transparency, and the refinement of a new era. It represents a visual elevation, subtly reflecting light to create a space that feels luminous yet never ostentatious.
- Cha Ca La Vong with marinated catfish infused with turmeric, combined with dill and scallions — refined yet deeply layered, standing as a vivid imprint of the old imperial capital.
- Hanoi Bun Cha simple yet sophisticated: charcoal-grilled pork gently intertwined with a light, balanced dipping sauce — a signature flavor that those well-versed in Northern cuisine immediately recognize for its authenticity.

Tay Ho does not pursue display or extravagance. We choose to re-present the identity of Northern Vietnam through precision, restraint, and elegance in every detail — so that with each visit, guests may sense a refined Northern spirit present in the heart of Saigon, expressed in a clear, subtle, and deeply layered manner.
